What an incredible experience this was. Yvan is just lovely and so generous with his time and knowledge. As a group we made four courses together - each more delicious than the last. My highlight was the dessert ...that ice-cream was phenomenal!

Yvan is a tour de force!! We originally planned to join him for cooking classes at his studio, but logistics made that plan problematic. Ever the artist Yvan offered a number of creative solutions to our predicament and ended up meeting us at the St Remy Wednesday market before teaching the lesson at our rental!!When you are with Yvan he doesn’t teach a cooking class, he shares his passion with you!! He immerses you in the experience!! His improvisational cooking overcame dietary restrictions while highlighting his artistic approach!You can see Yvan’s compassion reflected in the smiles of the vendors he engages in the market! I can’t say enough good things about Yvan!I only lament that there isn’t a centralized source to find all of the projects Yvan is pursuing.Ohh and the food, the food was unbelievable!!

Our evening with Yvan was a highlight of our trip to France - much more than a cooking class. We enjoyed his energy, enthusiasm, and wonderful conversation!
